What is a good piece to start learning multi-finger tapping on an e-guitar?

Depends entirely on your taste in music, I'd suggest trying to learn a piece you know and like.

Of course you could always work out some arpeggios or something you like the sound of.

I think this was the first song I learned using the technique:
