Yes, writing the lines in parallel is critical in my experience. Don't write one whole part and then try to fit the next one in around it and then try to add the one after that; that way lies a world of hurt.

As someone who does (historical) music composition recreationally, not as part of classwork, I appreciated the case study here. I wouldn't want to see this site be only that, but a well-structured one can help people beyond the OP. (But yeah, including just the relevant phrases rather than the whole piece is better.)

@Sergio, hmm, good question whether gum is ok. (Caramel, assuming you mean candies, is food so wouldn't be.) Would that help? I don't tend to chew gum normally so I don't know what effects it produces.

Yes, this approach works! For testing I duct-taped a longer dowel to my T wrench; that's not the long-term solution you want, but it was easy to experiment with.

Opinion questions are not a good fit here. "Who's better?" is not objectively answerable. If you want to ask about the key differences between their styles you can do that. (And since 16th- and 18th-c counterpoint are rather different, I don't think "who's better" is a particularly useful question even on an opinion site. It's personal taste, apples and oranges.)

Right, not all rennaisance polyphony is counterpoint, not by a long shot. I agree with the first sentence of your first comment -- counterpoint is a type of polyphony.
