I'm curious if there is still room for transcribing some of Bach's partitas for guitar, but have all the good ones that are possible been done already or is there still a multitude of possible transcriptions just waiting for some budding guitarist to transcribe? How many partitas did Bach write?

For violin solo (as Marzipanherz correctly points out) there are exactly three, and the score for guitar transcriptions is e.g. available at sheet music plus. There are lots of partitas for other instruments, but transcribing from piano is probably very advanced stuff for the transcriber as well as for the player.

There is a more complete list here, but further may exist.

I can recommended the only non-keyboard partita there : BWV 1013, originally for flute solo, fits on a handful of score pages.
