My knowledge of music synthesis comes mostly from these two books:

The Deutsch book has gone through a couple more editions, the most recent being in 2013, but in any case it's only tangentially about music synthesis.

Are there any recent surveys of music synthesis that I can use to update my knowledge? I'm mainly interested in understanding the theory and mathematical techniques. Not particularly interested in reading how-to books that discuss particular proprietary hardware or software.

    @RodrigodeAzevedo -- Questions seeking book recommendations are not welcome at many SE sites; one reason for this is that they tend to be opinionated. Another reason is that the quality of recommended books varies dramatically, but there is no way to control for this, leaving such answers essentially useless for askers. There was once at Stack Overflow a C Programming book recommendation question (now removed) that eventually contained many books, some good, some bad, and some terrible, but how would someone needing a recommendation know the difference? – ex nihilo Feb 19 '19 at 14:31
